How to Use an Instant-Read Thermometer
A thermometer is a small tool with an outsized job: confirming doneness without cutting food open or relying on color alone.

What matters when choosing one
Look first for a thin probe, a clear display, a comfortable grip, and a response time that lets you check several spots quickly. Water resistance and an easy-to-clean body are useful, but they do not replace careful hand washing of the probe. A folding probe protects the tip in a drawer; a sheath does the same for a straight probe. You do not need a complicated connected device for everyday stovetop, oven, or grill checks.
Where to place the probe
Aim for the thermal center: the thickest part of the food, away from bone, dense fat, and the cooking surface. For thin pieces, insert from the side so more of the sensing area reaches the center. For a whole bird, check the innermost thigh and wing and the thickest part of the breast. Take more than one reading when thickness varies.
A dependable checking routine
Pull the food partly away from direct heat when practical, insert the clean probe, wait for the reading to settle, and check a second nearby location. Clean the probe with hot, soapy water after contact with raw or cooked food, following the tool maker's care instructions. Do not leave an instant-read model in the oven unless its instructions specifically say it is designed for that use.
Know the safety minimums
USDA guidance lists 165°F (73.9°C) for poultry and leftovers, 160°F (71.1°C) for ground meats, and 145°F (62.8°C) plus a three-minute rest for whole cuts of beef, pork, veal, and lamb. Fish and shellfish are listed at 145°F (62.8°C). Personal texture preferences may lead you to cook beyond a minimum, but not below it.
Quick maintenance check
If readings seem suspicious, check the manufacturer's calibration directions. Many thermometers can be checked in a properly prepared ice-water bath; some can be adjusted and others should be replaced if inaccurate. Store the probe protected so it stays straight, clean, and easy to find.
