Choosing Cookware Materials
Match stainless steel, cast iron, carbon steel, and nonstick cookware to the heat, acidity, and handling a recipe requires.

Stainless steel for control and fond
Clad stainless cookware responds predictably, tolerates acidic sauces, and develops browned fond for pan sauces. Preheat gradually, add fat, and let proteins release naturally before turning. It is versatile but does not excuse overcrowding or excessive heat.
Cast iron for stored heat
Cast iron holds heat well for searing, shallow frying, and oven finishing. Its weight and slower response mean temperature changes take time. Dry it promptly, maintain the cooking surface according to the maker's instructions, and avoid long storage of acidic food in the pan.
Carbon steel for responsiveness
Carbon steel offers a seasoned cooking surface with less mass than many cast-iron pans. It rewards gradual preheating and regular use. Highly acidic cooking can weaken seasoning, so stainless steel may be easier for tomato- or wine-heavy sauces.
Nonstick for delicate foods
A sound nonstick surface is useful for eggs, tender fish, and low-fat reheating. Use utensils and heat levels recommended by the manufacturer, avoid abrasive cleaning, and replace cookware whose coating is peeling or badly damaged. It is not the best tool for building deep fond.
Safety and provenance matter
Buy cookware from a traceable manufacturer and follow its intended-use instructions. FDA has warned about certain imported aluminum, brass, and aluminum-alloy cookware that may leach lead. A material label alone is not enough when a product's composition and source are uncertain.
